We love chicken and summer is grilling season; grilling chicken makes sense. Nothing is quicker, tastier, and easier than chicken on the grill. Nevertheless, we get bored with the same ole chicken on the grill and this recipe takes the doldrums out of a grilled chicken dinner. The sweet flavor of orange marmalade marinade, smokiness of grilling, and then pairing with the zestiness of the sesame dip creates a divinely, scrumptious dish.
RECIPE
Grilled Orange Marmalade Chicken Skewers


- Prep: 30 minutes
- Marinate 1 to 4 Hours
- Grill 10 to 12 Minutes
- Makes 8 Servings
- 250 calories per serving
Ingredients
- 6 boneless, skinless chicken breasts (can substitute chicken boneless, skinless chicken thighs)
- ¼ cup lemon juice
- 1 cup orange marmalade
- 1 cup chicken broth
- 1 tablespoon finely grated lemon peel
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup honey
- ¼ cup stone ground mustard
- 4 tablespoons mayonnaise
- 2 tablespoons roasted sesame seeds
- 8 – 12” Bamboo wooden skewers
Preparation
Step 1
Cut chicken breast lengthwise into 1-inch strips. Sprinkle with salt and pepper, set aside.
Step 2
In a medium bowl whisk together lemon juice, chicken broth, lemon peel and marmalade.
Step 3
Pour marinade into a ziplock baggie and add chicken. Seal ziplock baggie and massage the marinade into the chicken for a minute. Refrigerate for 1-4 hours, turn the bag occasionally. Place the wooden skewers in water for about ½ hour.
Step 4
Prepare dipping sauce – In a small bowl add honey, mustard, mayonnaise, and sesame seeds. Stir until all ingredients are combined. Refrigerate until ready to serve.
Step 5
Drain the chicken and discard remaining marinade. Thread chickens strips on prepared wooden skewers.
Step 6
Preheat grill and spray with a non-stick spray. Then place skewers on a grill. Cover, and grill on medium heat for about 10 to 12 minutes or until no longer pink in the middle. Turn occasionally for even cooking.
Tips:
Serve with grilled vegetables and risotto (recipes coming soon) for an all-around healthy meal.
