Starting the New Year With Traditional Black-eyed Peas/Bean

How do you start your New Year? My mom always made Black-eyed Peas/Beans on New Year’s Day. She said it would bring us luck in the New Year! Keeping traditions alive are necessary! Love this simple, healthy meal to start the year. Can only hope the luck comes with it!

Mom’s Black-eyed Pea Soup

3 Smoked Hammocks
1 med Onion – chopped
3 carrots – chopped
3 stalks celery – diced
6 cloves Garlic – diced
24 oz dried Black-eyed Peas/Beans
Rosemary
Thyme
Salt and Pepper

Place all ingredients in a 10 quart stock pot, add water to about 1 inch below the rim. Place on stove on medium heat until boiling. Turn heat to low and simmer for 4-5 hours or until beans are tender. Before serving take hammocks out, take off meat and put meat in soup. Serve with cornbread!
